We'll kick off your day aboard our brand-new 2024 Sportsman 252, heading to some of my favorite productive spots along South Florida's inshore and nearshore waters. The beauty of this trip is flexibility — we're targeting table fish that taste amazing, so we'll adjust our game plan based on what's biting best that day. Expect to fish structure, grass flats, and reef edges where snapper, grouper, and trout love to hang out. The boat's equipped with everything you need, from quality rods and reels to a full spread of tackle that's proven to work in these waters. After we've got enough fish for a solid meal, we'll cruise to one of the area's scenic islands where the real magic happens. Your catch gets filleted fresh and prepared exactly how you want it — whether that's classic grilled fish, fish tacos with all the fixings, tangy ceviche, or clean sashimi cuts.
We'll be running a mix of techniques depending on what we're targeting and where the fish are holding. Light tackle spinning gear works great for the trout and smaller snapper, while we'll bump up to medium-heavy setups when we're going after bigger grouper and cubera snapper. Live bait is often the ticket here — pilchards, pinfish, and shrimp are hard to beat when these fish are feeding. We'll also throw some artificials when the mood strikes, especially soft plastics and jigs around structure. The key is staying mobile and reading the water. Some days the fish want bait right on the bottom, other times they're suspended mid-column or even shallow. That's where experience comes in handy — I know how these species behave in different conditions and seasons, so we can adapt quickly and keep the action going. The Sportsman's shallow draft lets us get into skinny water spots that bigger boats can't reach, opening up more opportunities for that fresh dinner.
Red grouper are the bread and butter of our catch and cook trips, and for good reason. These chunky bottom-dwellers love hanging around rocky ledges and hard bottom areas in 40-80 feet of water. They're not the flashiest fighters, but they pull hard with that bulldogging style that makes you work for every inch. What makes them special for cooking is that firm, white meat that holds up beautifully on the grill or in tacos. Peak season runs from late fall through early spring when they're most active, but we catch them year-round in South Florida. Yellow jacks bring completely different energy to the trip — these guys are speed demons that'll test your drag and make some serious runs. They school up around structures and when you find them, you can often catch several before they wise up. The meat has a bit more flavor than grouper, making it perfect for ceviche where that richness really shines. Cubera snapper are the heavy hitters of the bunch, with bigger specimens pushing 20+ pounds and providing enough fight to get your heart pumping. They're ambush predators that hang around structure during the day and move shallow to feed at night, so timing and location matter. When you hook into a good cubera, you know it immediately — they make powerful runs and use their broad sides to fight you all the way to the boat. Red snapper remain a customer favorite thanks to their perfect balance of fight and flavor. These fish are smart and structure-oriented, often requiring precise presentations to get them to bite. But when they do, you're in for both a fun battle and an amazing meal. Their sweet, delicate meat works for any cooking style we offer. Lane snapper might be smaller than their red cousins, but they make up for it with numbers and taste. These colorful fish often travel in schools and provide steady action when other species are finicky. Their size makes them ideal for whole fish preparations or when you want variety in your island feast.
